Raw Recipe: Pistachio Fig Bars

Hi everyone! I have a super simple, easy-peasy recipe for you today. Pistachio fig bars that are completely raw, Paleo, vegan and technically Whole30 compliant too! We had some friends stay with us a few weeks ago and they gave us some pistachios, coconut chips, flax-seed and figs (do they know me well or what?!) as a gift. I immediately put them aside and decided that I would make a bar or ball recipe out of the ingredients.

I love whipping up a quick raw bar recipe that I can have around the house as a healthy snack alternative or something I can eat before or during a workout. These bars are mostly comprised of carbs and fat, with little protein, so they’d make a great pre-workout snack or would be a great treat to take with you on the bike if you’re a triathlete or cyclist.

I used coconut oil to ¬†give them a smooth texture, but you could just as easily use honey or molasses if you wanted a sweeter recipe. You could also make these into balls instead of bars- same taste, but possibly a more fun way to eat them. You could also add other ingredients that you have around the house like chia seeds, cacao nibs, goji berries or other nuts- the possibilities are endless! The flax seeds give these bars a little bit of a crunch so if you don’t like flax seeds, just replace them with something else.

These bars are a great on-the-go snack for adults and kids alike. A little bit of salty mixed with a little bit of sweet. So, read on to see how I make these raw, Paleo, Whole30 compliant pistachio fig bars!

Raw Recipe: Pistachio Fig Bars

Ingredients:

  • 3/4 cup shelled pistachios
  • 1 1/2 cup black mission figs (stems chopped off)
  • 2 cups unsweetened coconut chips
  • 1/4 cup flaxseed
  • 1 tsp coconut oil
  • 1/4 tsp sea salt
  • 1/4 tsp cinnamon

Directions:

  1. Place the figs and pistachios in a food processor. Pulse until blended. Add in the coconut chips, flaxseed, sea salt and cinnamon. Pulse until blended. Then, add in the coconut oil. The mixture should be sticky enough to hold together when you grab it. Next, place the mixture into a 9×11 glass dish and press down with your fingers or a spatula until even. Place in the fridge for 15 minutes and then slice into bars. Store in-between wax or parchment paper or keep in glass dish.
